Big Time BBQ Rub

In one of my previous posts, I talked about how I smoked pork.  Following in the recipe for the Big Time Rub from Ray Lampe's Big Time BBQ Cookbook.

1/2 cup salt
1/2 cup turbinado sugar
1/4 cup firmly packed brown sugar
1 tablespoon granulated garlic
1 tablespoon granulated onion
2 tablespoons paprika
2 tablespoons chili powder
2 tablespoons freshly ground pepper
2 teaspoons cayenne pepper
1 tablespoon dried thyme
1 tablespoon ground cumin
2 tablespoons ground nutmeg

Combine all ingredients, mix well, and store in air tight container.  He recommends that granulated garlic and onion be used - they are a coarser grind, but the powdered may be substituted.
